Amaranthe

These plots are harvested at night because temperature is the primary enemy of fruit aromas. To achieve this goal, the vinification must also be respectful of the grape, delicate, and precise : gravity vatting, oxygen control, no sulfur use during vinification, aging on lees… Amaranth is a plant found abundantly in the vineyards of CHINON. It has two special characteristics. First, the purple-red color of some of its varieties is similar to that of young, fruity Chinon wines. Secondly, Amaranth is a plant that never fades, making it a symbol of immortality (it’s no coincidence that paratroopers’ berets are Amaranth red!). The Amaranth here is a nod to François Rabelais’ advice “Drink always, never die.”
