CUVÉE STORY
For a few years now, we have rethought our whole winemaking process : from the vine to the vat, from the vat to the press, from the must to the finished wine, and we have managed, without compromising quality, to completely eliminate sulfur during vinification. Thanks to a short and carefully monitored aging process, we can offer a small cuvée without any added sulfur. 7000 bottles which are bottled quickly under strict conditions, and for which we never use sulfur. Hermetically sealed with a quality cork, the wine can be kept and aged in the cellar. With or without sulfur, the transformation of grapes into wine requires work, attention, and expertise. Wine is the ultimate humanistic product, RABELAIS, the child of the CHINON region, knew it well… The winemaker’s hand on the label reminds us of this truth.
TASTING
Deep red color, seductive nose of red fruits. Juicy and fruity on the palate with coated tannins.
FOOD & WINE PAIRING
Pairs well with poultry, white meats, and grilled meats often accompanied by a spicy sauce.
